If you got Mike’s Hot Honey in your Thanksgiving share, here are some tips straight from Mike on how to use it on your turkey:
If you want the bird nice and crispy, you can baste it with a light coating of MHH about 1 hr before it’s ready to come out of the oven. The honey will caramelize while the bird cooks. You can also combine MHH with butter and herbs to create your own baste. The honey will lose some of its heat from being in the oven so if you like it nice and hot drizzle a little bit of MHH on the bird post oven. -

Next week’s CSA vegetable share has Fun Jen or Broccoli Rabe, Radishes, Corn, Tomatoes, and Dill. We’ll also have dill in our vegetable share this week! Originating in the Mediterranean and the South of Russia, dill (or dill weed) is fernlike herb that is most often used to flavor fish. It is also a wonderful addition to a pickling brine. Dill is best when used fresh, as it loses its flavor rapidly if dried. Dill is used in regional cuisine all over the world, from Scandinavia and Eastern Europe, to the Persian Gulf and Southeast Asia. Try using it to flavor salads or soups, fish or chicken dishes, or rice pilaf. Enjoy!
