    Bottarga is a Striped Gray Mullet roe which has been salt-cured and sun-dried. Our Bottarga comes to us from The Cortez Mullet Company, a fishing village located on the central gulf coast of Florida. Also known as Mediterranean Caviar, it has a highly salty taste that can be compared to dried anchovies, but with a silkier texture. Often grated sparingly in the manner of truffles over an omelette or pasta, bottarga can also be cut into very small wedges, sprinkled with lemon juice and served as an appetizer.

    Cheese 101: La Yerbera – is made from the milk of Murciano-Granadina goats. The cheese is aged for 25-45 days and the rind is coated in chopped almonds and extra virgin olive oil. The result is a compact cheese, creamy on the pallet, imparting the subtle flavor of almonds throughout the cheese. A great addition to any cheese plate.
