This may not exactly qualify as ‘news’ to most Brooklynites: Brooklyn chefs have been all over these trends for years…but it’s encouraging nonetheless: The National Restaurant Association’s survey of 1,800 chefs nationwide revealed that sowing gardens used to grow fresh produce and herbs was predicted to be the #1 restaurant trend this year. Using locally sourced meats and seafood, focusing on sustainability, mini-desserts, and locally-produced beer and wine rounded out the top five.
Happily, there is a lot of research indicating that these ‘trends’ aren’t passing fads – a focus on locally-sourced and sustainable produce has dominated these surveys for several years.
