Farm-to-table eating is clearly here to stay. It’s practically a requirement nowadays that any ambitious chef procure produce and protein from local, sustainably-minded farmers. One resourceful Brooklynite is pushing the trend a bit further: designer Kate Huling is making leather handbags from the hides of the very same locally-sourced, pasture-raised beef and pigs that are so artfully served up at Williamsburg’s Marlow & Daughters and Diner.
