For the latest episode of Food Curated, Liza de Guia takes us inside Bark Hot Dogs, Park Slope’s sustainable-minded, ingredient-driven fast-food joint, for a look at the Bark Butter – a clandestine condiment developed by co-owner and chef Josh Sharkey to elevate Bark’s dogs to true top shelf status.

At Bark, the goal is to deliver fast American comfort food, made with the best ingredients they can get their hands on. That means pastured, antibiotic and hormone-free meats from Heritage Foods and Meyer Natural Angus, seasonal produce from local farms, and house-made everything.

Liza spent a day with Josh unlocking the secrets of the Bark Butter – a blend of smoked pork fat and butter that he uses to finish Bark’s dogs with the rich, savory, smoky flavor that makes them one of the borough’s most-craved treats.
